Ingredients:
- Salt - (1/2) Tea Spoons
- Sugar - (1/4) Tea Spoons
- Red Onion - 1 Items
- Potatoes - 1 Items
- Cilanthro, Coriander - 1 Tea Spoons
- Red Chilli Powder - (1/2) Tea Spoons
- Turmeric Powder - (1/4) Tea Spoons
- Garam Masala - (1/2) Tea Spoons
- Peanut Oil - 1 Table Spoons
- Garlic - 2 Cloves
- Ginger - 1 Inches
- Asafoetida (Hing) - (1/4) Tea Spoons
- Cumin Seeds - (1/4) Tea Spoons
- Mustard Seeds - (1/4) Tea Spoons
- Carrots - 1 Items
- Zuccini - 2 Items
- Yellow Squash - 1 Items
Preperation Steps:
- Grind Ginger and Garlic together.
Main Steps:
- Cut all the vegetables in 1/2 inch pieces.
- Heat the oil and add mustard seeds, cumin, hing (Asafoetida) and let it crackle.
- Add turmeric and onion. Saute till onions are soft and add the ginger-garlic paste. Saute
- for another minute.
- Add potatoes and cover for five minutes.
- Add the rest of the vegetables, salt, sugar and spices. Cover till everything is cooked.
- Garnish with chopped coriander and serve hot.
