1 cup mixed dry beans and lentils (black eye beans, kidney beans, splot peas etc.)
1 cup diced mix vegetables (carrots, peas, green beans, corn etc.)
1 small red onion
1 small tomato
1 teaspoon tomato paste
Salt to taste
1/2 teaspoon cumin powder
1/2 teaspoon red chilli flakes
1 teaspoon oil
2 cloves garlic - minced
Soak the mixed beans and lentils in water for an hour.
Pressure cook the soaked beans and lentils till they are tender.
Heat the oil and add the onion. Saute for a minute and add garlic. Saute for another minute.
Add diced tomato and tomato paste. Saute for a few minutes and add the vegetables.
Cook till the veggies are half cooked.
Add the cooked bean and lentils and the rest of the ingredients.
Mix well and add water if needed.
Boil till the veggies are completely cooked.
Serve hot with a bread of your choice.
